Classic Marchesi 1824 Chocolate Pandoro is a rich and engaging reinterpretation of the Classic Pandoro. In this large leavened cake, the classic Marchesi 1824 dough, produced through a slow and skillful process using exclusively sourdough starter, is enriched with a fine cocoa powder from Ivory Coast and 72% chocolate chips. The soft and light dough takes on a brown color and the aromas become warmer and deeper. Compared to common yeasts, sourdough production requires more time and care to allow the development of microorganisms that provide multiple beneficial qualities and a unique flavor.
