In this grand leavened cake, the classic Marchesi 1824 dough—patiently slow-leavened using only the house sourdough starter—is enriched with a fine cocoa powder from Côte d’Ivoire and 72% chocolate chips. The soft, airy crumb takes on a deep brown hue and warmer, more complex aromas. Compared with common yeasts, sourdough requires more time and care to allow microorganisms to develop, imparting multiple beneficial qualities and a unique flavour.
