In this great 1kg leavened cake, the soft dough is the result of slow and skilful processing, thanks to the exclusive use of sourdough starter. The dough is enriched with fine truffles, which give it a rich and intense aroma. Compared to more common yeasts, production with mother yeast requires more time and care, to allow the development of micro-organisms that confer multiple beneficial qualities and a unique flavour.
