A NEWSPAPER BY APARTAMENTO X MARCHESI 1824

Gelato Deep Dive with Diego Crosara: an in-depth look at taste, technique, and balance

For Diego Crosara, Pastry Art Director of Marchesi 1824, gelato is an exercise in precision, where every detail is defined even before tasting. Texture, temperature, and ingredient balance must converge into an immediate result, capable of clearly expressing the identity of each raw material. Chocolate thus becomes a base to be interpreted, never a final destination.

The three new ice cream cups are created from Marchesi Gran Cuvée Venezuela 74% chocolate, which is transformed through pairings designed to highlight ever-changing nuances. Raspberries, yogurt, and basil enhance its freshness and vibrancy; apricot compote, almonds, and honey bring out its softer, more enveloping side; cold coffee, whipped cream, and hazelnuts amplify its depth and aromatic persistence.

Although they share the same origin, each cup builds a distinct experience, where chocolate interacts with different ingredients without losing its identity. It is within this balance between continuity and interpretation that the vision of Marchesi 1824 takes shape: a constantly evolving narrative of taste, where every tasting offers a new perspective on the same material.
