In this large leavened cake, the classic Marchesi 1824 dough, produced through a slow and skillful process using exclusively sourdough starter, is enriched with premium ingredients such as cinnamon, semi-candied pear, and ginger. Compared to common yeasts, sourdough production requires more time and care to allow the development of microorganisms that provide multiple beneficial qualities and a unique flavor.
